Ingredients:
- 100g starter
- 375g water
- 10g salt
- 500g all-purpose flour
Process:
- Mix starter and salt into water
- Mix flour into water
- Rest for 30 minutes
- “Rise and Folds” x 4 with 30 minute rest in between
- Bulk to double and size
- “Assemble Pizza”
- Top of oven rack on stone (use parchment paper) - 5-6 minutes @ 550 °F
