Sourdough Pizza

For 2 pizzas

Ingredients:

  • 100g starter
  • 375g water
  • 10g salt
  • 500g all-purpose flour

Process:

  • Mix starter and salt into water
  • Mix flour into water
  • Rest for 30 minutes
  • “Rise and Folds” x 4 with 30 minute rest in between
  • Bulk to double and size
  • “Assemble Pizza”
  • Top of oven rack on stone (use parchment paper) - 5-6 minutes @ 550 °F
